All of these products are made from 100% ground beef. We take an entire beef in and have it made into all these products, no fat and other fillers added. Remember no lips, snouts, ears, etc. are used. "Others use what we throw away."
We only make a batch of Specialty meats once or twice a year we will announce it on Facebook when we do. Very good stuff!

Split Side Beef Quarters
Always Taking Orders For Beef Quarters, halves and whole beefs
Our beef is sold directly to you, the consumer. The butcher makes four equal amounts from the steer—this is known as “split sides” so every buyer of that animal gets pretty much the same amount. The carcass is dry aged in the cooler for 10 days before being cut. The price is based on the hanging weight (H.W.) of the carcass, so each quarter would be the H.W. times the current price = final cost. Our current beef price is subject to change but has stayed the same for over two years. Our beef price includes butchering. So, a 175 lb. H.W. split side quarter X current price = $xxx.xx. No hidden or add on charges. On a final note, we do not ‘pad’ our ground beef, that is we do not add fat, tongues, brains or innards to the trimmed meat.
We offer three varieties of grass fed beef---
*100% Grass Fed/Grass Finished Beef raised on our on our pastures. No grains $6.85 lb HW
*Grass Fed/Grass finished, but with some Non-GMO corn supplemented over winter $5.90 lb HW
*Grass Fed/Conventional corn & grain finished. A heavier, fattier beef $5.30 lb HW
Remember we never have used steroids, growth hormones or sub therapeutic anti-biotics in our animals, and never will. Beef prices INCLUDE butchering.
Bison
All of our bison is pasture raised on grass. We do not grain feed or grain finish these animals. We do not feed lot them, de-horn or tag them. They are left to be as bison are supposed to be. Quantities are limited, but we usually butcher 2-4 a year depending on what is ready.

Pork
Fattened hogs are ideally 275 pounds live when they go to the butcher. This will yield about a 90-100 pound H.W. half. Pigs are sold by the halves, and they sell out fast, and most people will put their order in as soon as they can to reserve a half or whole hog. We will only raise 8 to 10 pigs in each group, and usually raise 3 groups a year. Our pigs eat NON-GMO corn and soybean as their main diet, and also get treats such as garden vegetables, table scraps and hay. Our 2023 price is $2.95 a HW pound for the pork, and the buyer pays processing which is about $140 for a half. Your total cost on a high quality and nice variety of pork from a half hog is around $450. Try it--you will not be disappointed!!

Here is a breakdown of the beef cuts found in a typical splitside quarter of a beef steer. Our butcher is Straka Meats, a family owned and operated company in Plain, Wisconsin. Custom butchering is available. This list is from a quarter weighing 225 pounds hanging weight, of the grass fed/conventional grain finished variety. Every beef is different so some may be larger, and some smaller. Hanging weight (HW) is the weight of the carcass after the head, hide and innards are removed, and is NOT delivered weight.
